A sweet treat for your sweet tooth…

Coconut and Cinnamon Apples

Apples are a great source of prebiotics which help good bacteria thrive in the gut and this dish has great anti-inflammatory properties. Add a little vanilla coconut cream and you have a decadent treat.

Ingredients

Serves 2

4 apples, peeled & chopped
1tsp cinnamon
1tsp vanilla extract
400g tin of coconut milk (put it in the fridge to chill first)

Method
  • Preheat the oven to 150’C/300’F/Gas mark 2.
  • Place the apples in a heavy-based, ovenproof dish and sprinkle with the cinnamon and a little water. Bake in the oven for 15 minutes until soft.
  •  Meanwhile, remove the top creamy part of the coconut milk from the tin and place in a bowl. Add the vanilla extract and whisk until smooth and creamy. Keep in the fridge until ready to serve.
  •  To serve, spoon the cooked apple into four ramekins and put a dollop of cream on top.
